Eggnog bread pudding
So now that the holidays are over, you're probably trying to clean out the fridge and find creative ways to get rid of all the leftovers..ya? One of my favorite holiday indulgences is egg nog! I love having it around for a couple weeks or so, and then after that I kind of get tired of drinking it. I had come across an eggnog bread pudding recipe awhile back, that I was itching to try out...and seemed like a great way to use up the rest of my eggnog in the fridge!
This past Sunday made for the perfect time to try out some new recipes, since I clearly was not going anywhere with the blizzard going on outside my door. (I also tried out THIS wonderful chocolate chip cookie recipe later that afternoon. They turned out amazing and are already almost gone! There is something about cold weather and comfort food...would you not agree?! This winter better not last much longer yikes..)What I think I loved most about this eggnog bread pudding recipe, was the fact that it didn't require a ton of ingredients or time to make, and yet it still tasted so rich and yummy! My kind of recipe ;)
This recipe is probably the perfect amount for about 4 people, so just double if you want to make a 9x13 pan! Here is what you need to get started:

6 cinnamon rolls (day old works best, not iced...and I actually just used Pillsbury..definitely don't need home made!)

1 cup of eggnog

2 eggs

1/3 cup white sugar

1/2 tsp nutmeg

1 tsp vanilla
The first thing you want to do is chop the cinnamon rolls into bite size pieces.
Combine the rest of the ingredients in a bowl and then add the cinnamon roll pieces, and stir to coat.
Refrigerate for about 30 minutes.
Preheat oven to 350 degrees and pour mixture into a 9x9, greased pan and cook for about 45 minutes. You'll know it's done when you insert a knife into the center and it comes out clean!
My hubby and I actually enjoyed this shortly after it came out of the oven, which I highly recommend. I poured a little milk over mine, since that is just how I have always eaten bread pudding and it was SO delicious! He doesn't like 'soggy bread' so he poured a little syrup on his and loved it as well. Good luck using up those holiday leftovers! ;)
